I love Pimms…I REALLY love Pimms and after running a series of Pimms bars throughout the summer I decided to have a little ‘play’ with this very British product for an event I was involved in at Rochester Cathedral Crypt earlier this month. The people we were catering for were happy for us to go for one of the puddings that would be fruit based. The other two were lemon meringue pie and profiteroles so I thought it would be fun to ‘play a little…..
What you see in the picture is Pimms Jelly, with strawberries and mint, hand made short bread served with clotted cream and mint…how quintessentially British. I has never played with gelatin leaves before and am glad I tried it out the week before. The total prep time was about 30 mins and of course, once they are in the cups and in the fridge, it’s only a case of letting them set.
The recipe for this will appear on the site soon…but in the meantime I am off to try my gin and tonic jellies with popping candy!
