As I seem to spend so much time in the kitchen cooking for my parents as well as friends and family I like to have a little play around with traditional recipes. I mastered the flavours of a cottage pie a long time ago, (once I realised the difference between cottage pie and shepherd’s pie!) and it’s a firm favourite in my house. I also seem to have a thing for potatoes, and at the moment, jacket potatoes so I decided to have a little play and here’s what happened.
I baked the potatoes in a hot oven, cut them in half and scooped out that lovely fluffy mash. Butter and cream were added to the potatoes. The cooked mincemeat went in the potato skins, the mash put back on top and the ‘cottage pies’ were baked in the oven at gas 6 for about 30 minutes.
Sometimes great food doesn’t have to be complicated!
